冬之味:米味噌製作

味噌(ㄘㄥ)是日常飲食常見的調味料,最常用來煮成湯品,不管是自助餐店、日式料理店、或是家裡的餐桌上,經常可以喝得到滋味甘醇的味噌湯。不過,相較於日常使用的頻繁度,人們對它的製造過程卻是陌生的,看起來土黃色的固態醬料似乎很難令人直接聯想到哪一種原料。原來味噌的主要原料是黃豆,加入米麴、麥麴等不同的種麴接菌後發酵而成,富含人體所必需的胺基酸、維生素B群等,讓黃豆的營養成分更容易為人體所吸收。立冬之後,是最適合做味噌的時節。野蔓園用自己種的米做成米麴,與黃豆一起封存進陶甕裡,期待醞釀一年之後能與各位有緣人共享。


製作米麴的第一步是蒸米。將米泡水一整晚後,放在大灶上蒸煮1小時。大約蒸7分熟後,就可以拿出來攤在竹篩上,並用紗網覆蓋住,自然放涼至室溫(約1小時)。若用電鍋煮就必須加少一點水(1:0.6),外鍋放2杯水,減少水份在電鍋裡將米悶濕,煮好後儘快拿出攤涼。


將買來的米麴菌母用研磨機打成粉後,均勻撒在米飯上(鋪2-3公分厚),蓋上乾淨的紗布,用棉被包住保溫,維持發酵溫度約32-36度。如果米麴的數量多,可以如下圖一樣用竹篩子隔開層疊起來,保持透氣。米麴使用的量越多,成功率也越高,不過通常1斤米至多用半斤的米麴菌母粉即可。


12小時後將棉被打開,看有無雜菌,若有則需立即清除。如果米麴結成塊狀,表示走菌的程度良好。3天發酵完後即可放入「紙袋」冷藏或冷凍保存。麥麴與米麴的製作方式是一樣的。


接下來是製作味噌的主體:黃豆泥。將黃豆泡水一晚後同樣用大灶煮至一捏即破的程度(大約需要4-5小時),瀝乾後用絞肉機壓成豆泥備用,如果希望口感細緻一點則可以絞兩次。煮黃豆的水不要丟掉,加入3克的鹽巴調成種水,可以用來調節味噌醬的乾濕度。


接著將黃豆泥、米麴與鹽巴混和均勻,並加入一湯匙老味噌。黃豆泥與米麴(本圖示範的為麥麴)的比例為1:1,亦可實驗1:1.5或1:0.5的口感。鹽巴的比例則不要超過米麴加豆泥總重量的1/2。


將混和好的醬泥捏成一顆球,並用種水調整濕度到丟入缸內不會碎掉的程度。


再來將泥球放入缸內,用拳頭壓實,將空氣壓出,並用保鮮膜鋪放最上層以阻隔空氣,最後壓上一顆石頭。3-6個月以後熟成即可食用,放越久越好吃喔。

野蔓園換工須知

野蔓園是一個實踐樸門永續設計(Permaculture)的教育型農場,更是一個自主生活的訓練中心。因為現今的環境,為了讓大家生活「方便」、「快速」,反而造成地球與其他生物的不方便,同時也讓人們失去了許多生存的技能、與自然共處的經驗與智慧。在這樣的定位下,來到野蔓園的生活,就不會是「他人幫你準備好的舒適生活」,而是任何你想得到的食、衣、住、行等生活事物都必須自己做與學習。

[野蔓園自主學習四部曲]
1. 照顧自己:熟悉環境、了解如何解決自己的基本需求。
2. 照顧他人:用照顧自己的方式照顧別人的需求,特別是農場的工作都需要分工合作,每個人都必須找到發揮己力的方式。
3. 解決問題:主動提問,你會學習到更多東西。但提問前,請先自行思考與觀察,或是提出解決方案,我們會有更棒的互動!所有的問題都是正面資源,也都是答案。
4. 回饋分享:將自己的經驗或心得分享給下一位換工或是有興趣了解野蔓園生活的人,以及想一想在離園之前,如何可以讓野蔓園更好,並動手實踐它。

一、工作項目
1. 時時觀察:請從觀察自然與周遭環境裡的人、事、物。
2. 澆水:每日必做的基礎功,練習專注與觀察力,同時可以認識多種香草與藥用植物,與植物作朋友。
3. 農耕事務:
    輕體力:如植物換盆與修剪、育苗、收集田間乾燥木頭
    中體力:如割草、種植、劈柴
    粗體力:如搭建自然建築、挖灌溉水道
4. 每餐收集食材:每天認識一種野生的可食植物
5. 吃一種三:吃一顆菜,請種回三顆來分享,一顆歸還野蔓園,一顆歸還大地(如蟲也需要吃),一顆回饋給下一位。現在你所享受的食物,也是前人努力所留下的,同樣請愛惜物資和心懷感激,尊重環境與傳愛他人。
6. 撿柴、劈柴:槓桿原理的最佳練習,可認識不同材質的木柴,提升肌耐力。絕對不要空手回到生活區。
7. 烹煮:學習料理自己的三餐(蔬食),或輪流為他人準備伙食;更可以發揮料理創意,「沒有廚藝沒關係,但要有誠意」。
8. 不定期任務:工作坊課程備課、文字或影像記錄、網站管理、新換工接待、手作季節性農產品、窯烤麵包、環境整理…

二、換工條件:
1. 換工天數至少三十天:第一天到園日,請安排週間十一點前抵達;我們更歡迎長期性的一個月至一年期換工。
2. 一日志工:若有意願體驗,但無法一次長期換工者,可選擇週一至週五的其中一天,擔任長期固定志工。
3. 台灣樸門永續發展協會志工:或是願意協助建造都市樸門基地與運作,歡迎以您的專長,如木工、縫紉、設計、翻譯等等,共同推廣台灣樸門。
4. 每日工作時間:約為早上三小時,下午三小時,其餘時間為自由活動與學習時間,可留在園區或自行至鄰近區域。
5. 每週可休假一天,可自行決定,但須先告知亞曼與實習生。
6. 推廣與分享:離園時,請繳交換工心得一篇。

三、野蔓園的生活基礎設施
1. 可遮風避雨的小木屋、堆肥式廁所、大通鋪、露天淋浴間(需燒熱水洗澡)等。
2. 野蔓園使用火箭爐、土灶與麵包窯來製作三餐(視人數與需求而定),換工須自理或與其他換工一起打理三餐,農場所生產的食材皆可使用。
3. 園主並未居住於園內,欲留宿者,需有獨自一人住宿的心理準備。

四、自備物品:
1. 睡袋、寢具、蚊帳
2. 輕便工作服:長褲長袖較佳
3. 防曬衣帽
4. 工作鞋:這裡有前人留下的共用雨鞋
5. 山區易下雨,務必攜帶非一次性的雨衣
6. 盥洗用具等個人用品(不含化學成分)
7. 蚊蟲藥膏與私人藥品:山區夏天蚊子多,又相當活潑,請學著和蚊子溝通,適應與蚊子的相處方式
8. 手電筒
9. 垃圾不落地:請勿攜帶會污染環境、不能自然分解的物品、寶特瓶等,若不得不攜帶,也請於離開時自行帶離走。

五、換工申請
如可以接受上述說明與條件,請先填寫換工線上申請表,並於到園前三天,再來信確認抵達日期與停留時間,以利安排接待與報到事宜。

Working Holiday Information of Yamana Garden


Yamana Garden is a permacultural farm providing courses and self-depending skills training. Nowadays, fast and convenient modern life style has caused some “inconvenience” in natural environment. Our human societies are also facing the loss of many precious living skills and the wisdom to coexist with our mother nature. Based on this view, life in Yamana Garden is designed as “not so well-prepared, and not so comfortable”. Participants and volunteers here have to learn taking care of themselves in every aspect of life.

Finding what you can do to facilitate team work.

Share your experience with newcomers and everyone who wants to know about Yamana Garden. Before you leave, please try to think about how to make Yamana Garden better, and make it happen!

Works in Yamana Garden

1. Observe everything anytime.
Natural environment, surrounding area, plants, your fellow participants….etc.
2. Watering
Fundamental routine job. Improve your concentration and observation skills.
Recognize herbs plants in our farm, and make friends with them.
3. Farming
Light: prune, propagate, firewood collecting.
Medium: mowing, planting, firewood chopping.
Heavy: Natural building, irrigation canals
4. Collect food for daily meals.
And to identify an eatable wild plant a day.
5. Eat one, plant three.
One is for Yamana Garden, another is for nature (if insect or worm love it), and the other is for sharing. Food you collect on this farm might be other participants’ effort, so please be grateful, respectful, and cherish everything here.
6. Collect and chop firewood.
Time for lever principle! Good exercise, and could strengthen your body.
Recognize different kinds of firewood.
“Never come back (to living area) with bare hands.”
7. Cooking
We only supply vegetarian food here.
Cook together for yourself and others. Use your creativity.
You don’t need to worry about your culinary skills, sincerity is more we care.

Application Requirements

1. The minimum duration of stay is one month.
Please come on weekday and arrive before 11 a.m.
Stay longer than half of a year or a whole year are more welcome.
2. One day volunteering (Long-term)
For those who are willing to join us but couldn’t stay long, could choose a fixed weekday (from Monday to Friday) and become our long-term volunteer.
3. Volunteering in Taiwan Permaculture Institute.
Or willing to help developing and operating urban permaculture site. 
Applicants with specialist fields of expertise (ex. carpentry, tailoring, design, translation) are welcome.
4. Daily working time: 
About 3 hours in the morning, and 3 hours in the afternoon.
In you free time, you can choose to stay at farm or visit neighborhood.
5. Rest day.
You can decide any one day in a week as your rest day.
Please inform Mr. Yamana (the owner) and interns in advance.
6. Sharing.
Please share your feedback (in written form) with us before you leave.

Infrasturcture in Yamana Garden

(Different stoves are used depends on the number of people or purposes)

Please do not bright PET bottles or things can’t naturally decompose or pollute the environment. If you have to, please carry them out when you leave.

“Tried growing mushrooms before, and it didn’t work" – if I had money for every time someone has said that to me I’d be a very rich man…and probably no longer a mushroom farmer! Mushrooms are notoriously unreliable to grow, partly due to the mass-produced low quality kits that people often try. Almost mystical organisms, they seem to pop up in the wild in an unpredictable way, often only appearing for just 5 or 6 days before vanishing back into the ground again, not to be seen in the same spot for another year or three. Yet, despite a poor reputation amongst home growers, by using a particularly simple technique and getting a bit of insight into how mushrooms grow, it is possible to successfully grow your own gourmet mushrooms at home. So how exactly are mushrooms cultivated? How can you have success at home? And more to that point – what’s all this got to do with waste coffee grounds?

「我曾試過種香菇,但是都失敗了!」如果每次有人跟我說這句話我就能賺到錢,那我肯定是個有錢人,而且不會在是個香菇農夫。大家都知道香菇是很難生長的,部分是因為那些一般人會去嘗試使用的那些大量生產而且低品質的套裝組合。他們大部分都是神祕的生物,他們通常會在無法預期的時候出現,在消失於地底之前只會出現5~6天的時間,然後可能在明後幾年在相同的地方都不會看到他們。然而,即使在居家生產者之間有著很差的名聲,只要使用一個特殊又簡單的技術,還有知道一點香菇是如何生長的知識,就有可能在家裡成功生產香菇。所以到底香菇是如何種植的呢?到底在家如何才能成功?最重要的是,到底要如何用咖啡渣種香菇?

How Mushrooms Grow 香菇是如何長大的?

How to grow your own mushrooms
Firstly, you must understand the life cycle of a fungus. Similar to the fruits produced by a tree, mushrooms are the reproductive fruits of a dense, root-like network of cells, called ‘mycelium’. In the wild, this white network of fine threads grows out it all directions, breaking down its food into simpler molecules to further fuel its growth. When it runs out of food, or is put under some other form of environmental stress, it switches into survival mode and produces mushrooms in order to release its spores to the wind and find a better place to live. Fortunately for us humans, it’s possible to recreate and manage this life cycle, and by doing so you can nurture many a fine crop of mushrooms for the table!
Now, it must be said that growing your own mushrooms is definitely more difficult than growing nearly any other crop if you use the standard methods. Mushroom farming normally relies on significant pasteurisation equipment and climatic control. This can be hard to recreate at home without spending a fortune.

首先,你要先了解真菌的生命循環。跟一棵樹要生產水果很類似,香菇是一種菌絲體,一種濃密而且呈現根狀分布的繁殖體。在野外,這個白色的網絡細線,會四面八方的伸展出去,把它的食物分解成可能幫助他成長的養分。當食物吃光了,或者是面臨某種環境的壓力,她會開始轉換成[生存模式],然後開始產出香菇,那是為了要把她的孢子釋放到野外去,找一個更好的地方去生存。對我們人類來說,非常幸運地是,我們很可能能夠重新創造而且管理她的生命循環,而因此能夠在桌子上就能夠生產許多良好的作物。
現在,生產自己的香菇遠比你使用標準的方法去種植其他作物都還要困難。種植蘑菇正常來說都依賴特定的巴士德消毒(pasteurisation 巴士德消毒法)設備,還有氣候條件上的控制。因此除非花上一大筆錢,否則是在家裡是很難再製的。

Growing Oyster Mushrooms 生產蠔菇(又稱為 平菇)

Growing oyster mushrooms
The best advice for success is to start by growing Oyster mushrooms, the easiest and most forgiving variety for any home cultivator to grow. Next you must consider the growing medium. The most common materials to grow Oysters on are usually freshly cut hardwood logs or shredded straw. Growing mushrooms on logs can be quite hit or miss and will take up to a year for your first harvest. Growing on straw requires you to pasteurise the straw first, to kill off resident micro-organisms that will compete with your mycelium.
This is where coffee comes in. The beauty of growing mushrooms on fresh coffee waste is that the substrate is already pasteurised by the coffee brewing process, so you can bypass the whole pasteurising step and get straight into the inoculating. Plus, spent coffee grounds are a huge waste resource, and are packed full of nutrients which your Oyster Mushrooms love to grow on.

要成功最棒的建議就是開始種植平菇(蠔菇 Oyster mushrooms),他們是最簡單能夠生產,也是最能夠容忍任何家庭氣候的菇類。下一步,你必須先考慮生長介質。最常見用來生產平菇的通常是剛砍下來的硬木頭或者是稻草梗。在木頭上生產香菇很可能會豐收或者一無所成,而且必須花上一年的時間才有第一次的收成。在稻梗上生產必須先對稻草梗做巴士德消毒,必須殺掉稻梗上面那些可能會跟菌絲體競爭的微生物。
然後這就是為什麼需要咖啡了。在新鮮咖啡渣上面能夠長出很美麗的香菇,因為這些咖啡渣在蒸煮的過程中已經高溫殺菌,所以你可以直接跳過整個巴士德殺菌流程,然後進入接種的階段。順帶一提,咖啡渣是一項非常巨大的廢棄資源,而且包含了平菇所需要的完整的營養成分。

Inoculating  接種

Tips for growing mushrooms
Firstly order your spawn in. You’ll have greater success if you use a high spawn: coffee grounds ratio. To begin with, I’d recommend using around 500g of oyster mushroom spawn to each 2.5kg of spent grounds. If the vendor you purchase the spawn from also sells filter patch grow bags, get one of these too. They will increase your chance of success by reducing contamination and providing the perfect growing environment inside the bag. If you can’t source one of these, you can try using a large 2 litre freezer bag, empty ice-cream tub or milk carton – cleaned out well, and with 4 x 5mm holes cut in the sides.

首先,先採購菌種。如果你使用咖啡渣來種植菌絲,那很可能會有巨大的收穫。剛開始,我建議使用500g的平菇菌絲對2.5kg的咖啡渣。如果你買菌種的廠商也有賣專用的生產袋,可以買一些回來使用。他們會因為減少被污染的機會而增加成功的機率,而且在袋子裡頭會提供完美的生長環境。如果你買不到這種袋子,你可以試著使用一個大的2L的冰凍袋、空的冰淇淋盒子或者牛奶盒,然後再旁邊搓出許多4x5mm的小洞。

Coffee collection 收集咖啡

Go to a busy café and ask them nicely if they can give you some spent grounds. You’ll need enough to fill the bag or container you’re using two-thirds full, and the grounds need to be fresh that day. Most cafes will be happy to do this – if you encounter any problems, just ask at another one. Large cafes get through kilos of the stuff every day, and most are happy to see it going to good use. Take it home and (within 24 hours whilst it’s still fresh) weigh out 2.5kg of coffee into a clean mixing bowl.
Wash your hands and lower arms well and mix your spawn into the bowl, breaking it up and distributing it evenly throughout the coffee. Now load the mixture into your cultivation bag or container and close it up tight, ensuring you have cut the 4 air holes if you are not using the filter patch bags.

找一間生意很好的咖啡店,詢問他們能不能給你一些咖啡渣。你可能需要把袋子或是容器裝到2/3滿,而且咖啡渣最好是當天新鮮的。大部分的咖啡店通常很樂意給予。大型的咖啡店每天可能都會產生好幾公斤的咖啡渣,因此都很樂意能夠被好好使用。盡量在24小時內使用,帶回家之然後量出2.5KG的咖啡渣然後放進一個乾淨的混合碗當中。
把手洗乾淨,然後把菌絲混入碗中,然後把他們均勻會合。現在把這些混合的東西放進準備好的培植袋/容器裡頭,然後綁緊他們,如果沒有使用專用的培植袋的話,必須確保你有保留四個空氣流通的孔洞~

Spawn run 開始走菌

Place your bag/container in a warm (64 – 77°F, 18C – 25°C) and dark place (airing cupboard, under a bed, in a cupboard in a heated room etc). During the next three weeks, you will see the spawn come to life and grow across the coffee grounds – turning the whole mixture white by the time it has fully colonised the mixture. It’s a fun time to keep checking up on it and watch it grow from day to day.

把袋子/容易放在一個溫暖(18~25度C)、陰暗的地方(通風的櫥櫃、床底下、有暖氣的櫥櫃裡頭)。大約經過三個星期,你會看到菌絲開始生長,然後把整個咖啡渣都長滿白色的菌絲,直到她佔據整個容器為止。在這段時間是最有趣的時候,每天都可以看他成長。

Fruiting 收成

After 3 weeks, your whole bag/container of the coffee and spawn mixture should now look completely white. If you see any areas of green, this is a competitor mould. If it is just a small patch, you can try adding a little salt to the area which should kill it off and still allow the mushroom mycelium to prosper. If the whole bag has gone green, then I’m afraid it’s a lost cause and will most likely be caused by poor quality spawn, or by a lot of mould spores having been mixed in with the coffee grounds somewhere along the way. However, if you have used a high rate of spawn, fresh spent grounds and followed clean hygiene, the chances are you will be looking at a nice white bag of mycelium ready to fruit you some home grown mushrooms.
Place it in a spot with plenty of fresh air and a little light – a shaded windowsill or worktop is ideal. Cut a 5cm x 5cm (2in x 2in) hole in your bag/container and spray this area twice daily with water, trying not to allow it to dry out. Mushrooms love damp, humid conditions, and they will outright refuse to grow if it’s too dry.

大約三週之後,你的整個裝滿咖啡渣與菌絲體的袋子/容器應該會整個看起來都是白色的。如果你看到任何區域是綠色的,那就是一個跟菌絲體競爭的黴菌。如果只是一小部分,你可以試著加一點鹽到這個區域,有可能可以殺死他們,然後還能讓菌絲體繼續繁殖下去。如果整個袋子都變成綠色的,那很可能就是種植失敗了,很有可能是因為菌絲的品質部好,或者是咖啡渣裡頭有許多黴菌。不過,如果你是使用高品質的菌絲、新鮮的基質以及維持乾淨的環境,你看到一個完美的白色袋子的機率是很高的,接著,你就能夠準備採收香菇了。
接下來把袋子放在有新鮮空氣而且還有一點光線的地方,有遮蔽的窗戶或者工作台上面都是很理想的。接下來在袋子或容器上切一個5×5公分的洞,,然後一天噴兩次水,試著不要讓它乾掉。香菇喜歡潮溼、濕熱的環境,如果太乾他們是不會生長的。

After a week or so, you will start to see tiny little mushrooms bursting into life. Over the following 5-7 days they will double in size every day. This is a really fascinating time! Each day you wake up to find them larger; looking more and more meaty and ready for the eating. When the edge of the caps begin to turn upwards, it’s time to harvest and enjoy the fruits of your labour. Cut at the base of the stems and get cooking!

大約一週過後,你就會開始看到一些小的香菇開始生長了。大約經過5~7天,他們就會每天以倍數成長。這也是最令人興奮的時候,每一天你起床都會看到他們越來越大,看著他們越來越厚實,準備可以實用了。當香菇的邊邊開始往上翻的時候,就是可以採收的時候了,然後享受你過去辛苦勞動換來的甜美果實。把他們從柄的地方切下來,就可以開始烹調了。

轉換跑道之間




大約兩年多前,每天坐在無趣、了無生機的辦公室裡,我對追求效率與名利的都市生活,以及工業社會的制式化,深感無力。內心不禁疑惑起來:這樣的生活究竟有甚麼意義?這真的是我想要的嗎?就在那時偶然看到了野蔓園的網誌,打工換宿這個名詞就像黑暗中的一盞燈,離我的生活有些遙遠,卻又讓人嚮往。但當時的我太過膽小,即使不滿於當下的生活,卻也沒有勇氣改變,只是將野蔓園的名字收進記憶的抽屜中。這兩年以來打工換宿這件事一再在我腦中徘徊。於是今年三月在轉換跑道之間的空檔,終於邁出這一步,來到陽明山附近這座小巧精緻的農場,體驗融入大自然的生活。


燒柴&野菜

來之前總是有很多想像,尤其是燒柴的部分。燒柴耶!印象中只有古早奶奶輩使用的灶才會需要燒柴,現代都市中大概只有在主打柴燒披薩的店家內可以看到木材熊熊燃燒的場景了!農場內廚房的確有灶,不過只有在人很多時才會用到,平常時候則使用火箭爐煮食,不用燒那麼多柴。

在廚房裡千萬要小心,尤其是大火燒很旺的時候。廚房動線有點不順,我被那粒劈柴的大石頭絆到好多次>_< 建議移開它,或是在火箭爐旁清出位子,當作暫放待煮食材和待用盤子的空間。

在農場的前面兩天,主要在拔雜草(得努力不要拔錯...)和種菜,尤其是拔草,完全能體會到「春風吹又生」啊!看著怎麼也拔不完的雜草,深深感受到春天的腳步在土地上留下了痕跡。從早上拔的雜草中分出可食用的部分,中午就成了飯桌上一道充滿野趣的「炒野菜」。我這幾天最常吃到(生命力太過旺盛...)的有:好吃的川七,以及味道實在不怎麼樣(難怪從沒看過在市場賣)的長梗滿天星、黃安菜、假吐金菊...等。

不小心拔雜草拔得太忘我,第二天晚上雙手出現了俗稱「板機手」的肌腱炎症狀,趕緊拼命按摩手掌手臂。按摩真的有效呢!睡前還痠痛得差點爬不上床鋪,隔天起床就活過來了!除了下手臂和手掌手指都要按摩之外,我試出了一個簡單有效的按摩方式:先把手掌反摺支撐在椅子上

然後另一手拉動大拇指,儘量把關節拉平到極限。這樣拉個三十秒之後,放鬆手掌二十秒,然後再重複。有空的時候就可以拉一拉,拉完之後好放鬆好舒服呢!


粒粒皆辛苦之福壽螺大捕捉

另外,米飯實在好吃到不行!日曬的糙米又軟又Q,跟外頭吃的糙米口感完全不一樣啊!

第三天亞曼帶著我們到宜蘭的田裡,為春耕的新苗放水和除福壽螺。第一次踩下水稻的田裡,腳陷下去踩不到實地,嚇了好大一條,好怕就這樣不斷沉下去。看亞曼和爵謙神態自若的在田裡走著,我一開始只能一手扶著岸邊(田埂),一手在泥漿中摸索福壽螺。福壽螺被人一碰就快速縮回殼中,有時手剛好摸到它縮回去那瞬間的殼蓋邊緣,那觸感好詭異,令人不禁背脊發冷,但抓久了之後就習慣了。台梗十號的幼苗好嫩好小,福壽螺吃得好開心......,有些螺被我們抓起來時還硬是咬著一隻稻苗,死也不放。那天下午至少抓了上千隻吧!推在一旁真是壯觀。


窯烤麵包

來野蔓園之前我對天然酵母的認知是--天然酵母「粉」......從沒想過真正的天然酵母可以養出來!

可惜做麵包的那天,酵母還沒成長夠。沒關係~我的麵包初體驗就先用酵母粉了。雖然家裡廚房一定備有麵粉,我對麵團實在不在行,頂多只能調麵糊,麵團每嘗試每失敗,不是太乾就是太濕,太乾加水之後又太濕而再加麵粉,搞到最後麵團越揉越大...。這次如果不是爵謙在一旁幫忙補救,大概也會是一樣的情況,哈哈。揉好麵團靜置發酵之後就要包內餡整型囉!一開始前面幾個麵包我還弄不清楚該怎麼包,成了醜醜的爆餡麵包捲,後來的應該有好一些,嗯,應該(心虛)。

沒看到烤麵包的過程,啊,這也好可惜。聽說窯的準備就要燒柴兩個小時!真是大工程。

這次的麵包做了香椿醬和爆米香兩種不同的內餡口味。香椿醬好吃!爆米香則是很讓人意外,經過窯的高溫慢烘之後竟然還原成了米飯!從沒料想過呢!生活實作的實驗結果有時真是充滿了驚奇。


這次換工感覺非常的充實,每天工作雖然累,心裡卻是滿足的。不知道是不是山裡頭「能量」足夠的關係,平常在都市中總愛賴床的我,竟然每天七點就自動醒過來了,鬧鐘都還沒響呢!而且整天精力充沛,胃消化不好的老毛病一次也沒出現過。但確實有十分不方便的地方,例如燒柴。下山後看到瓦斯爐和蓮蓬頭熱水覺得超感動啊!但也是因為體驗到這樣的不方便之後,我才能夠對生活中這些理所當然的事物,感到惜福與知足。
